Nebraska Extension’s mission is to engage with Nebraskans wherever they are, connecting them with resources, research and innovation of the University of Nebraska. Serving in 83 county based offices across the state and connecting 350 communities together, the Nebraska Extension program helps to strengthen Nebraska agriculture and food systems, inspire Nebraskans and their communities, and enhance the health and wellbeing of all Nebraskans.
In partnership with Alyssa Wessling from Nebraska Extension, Mosaic in Omaha is participating in bi-weekly workshops that focus on information on food choices, confidence in the kitchen and food safety practices. “A couple of years ago, I noticed a big gap in the “all” when it came to enhancing Nebraskans’ health,” says Wessling. “No one was really focusing on helping our adults with intellectual and developmental disabilities. I wanted to provide those participants with the life skills and resources that they need to feel confident in their abilities in the kitchen and to have more responsibility and autonomy over their own nutrition choices and wellbeing.”
Mosaic’s goal with Nebraska Extension is to provide these workshops over the course of an 18-month period, to ensure all individuals who want to participate, have the ability to go through the program.
