We invite you to come experience the warmth and fun of Brownie’s.
How did you get started in the business? – I had a long career as an engineer in Iowa, but I started to get burned out. A close friend recommended trying something new and easy, like buying a bar and restaurant. The only thing he forgot to mention was that running a bar is precisely 4,000% harder. We’re still friends, but I make him pay full price for drinks.
What is the biggest challenge you’ve faced professionally? – Transitioning from engineering to the bar business, I was completely surprised by how vital importance of social media. Let’s just say I wish I’d dedicated less time to blueprints and more time to planning my digital strategy!
What has been your most important achievement professionally? – My path to a degree was anything but typical: I was 29 years old, raising three kids and working full-time so I could graduate without taking out a single loan. I remember feeling so much older than my peers that I was too embarrassed to walk at graduation. But perspective changes everything. That degree is now a permanent source of pride—it’s a testament to the fact that hard work and dedication have no age limit.
What is your favorite thing to do on a day off? – I’ll let you know if I ever get a day off.
What is your favorite quote or the best piece of advice you’ve ever received? – “In the bar business, don’t chase your bad days. Just let them be bad.” – Brock.
What is your favorite local Papillion restaurant? – Moran’s Grill, Grace Pizza & Shakes, Goose’s Bar & Grill, Papillon Taco Guy, and Sauced by Alfaro, of course!
