Kevin Fischer has had a long career in restaurant management, first working for the Ranch Bowl, then moving to Kansas City to learn about Tanners Bar and Grill, which he later helped bring to Omaha. The next step was opening his own restaurant, which he did this year with Baja Grill. Baja Grill serves California/Mexican style food with all fresh ingredients, smoked meats, homemade sauces and soups, wings, wraps and pizzas. They take great pride in cooking everything fresh to order. Baja Grill is a very relaxed atmosphere that can seat about 125 and they have a party room as well that seats up to 50.
Tell us a little about your family. – I have a wonderful family and the most amazing daughter in the world; Quinn will be four in June. I am truly blessed with the wonderful people who I get to see and be around when we have family parties or just going over to the parents for dinner.
What do you see as one of the biggest turning points in your life? – I would say having my daughter would be at the top of my list for that. She is so wonderful and brings a smile to my face every time I see her. Having Baja Grill is also a huge turning point for me because I truly feel like I have put something together that is amazing and I am very thankful for the staff I have behind me to make sure that we all accomplish that.
What is your favorite thing to do on a day off? – I like to relax and catch up on my DVR shows, maybe go see a movie, take my daughter to the zoo or take a nap. But I really can’t say I have had a day off in forever because having a child is enough work on its own, but we get to do some really fun things all the time. And no matter what, when she is with dad, she is really happy.
What is the most unique or interesting thing about you that most people probably don’t know? – I like to play video games on occasion. I know it’s kind of childish, but I am a huge fan of South Park. Curb Your Enthusiasm is one of my favorite shows as well. I also love to cook, have a nice glass of wine or cold beer and I like to watch TV in bed until I fall asleep.
What are you the most proud of? – I am most proud of my daughter Quinn, and Baja Grill.
What is the one goal you would most like to accomplish? – I would like to jump out of a plane.
If you could have a super power, what would it be? – Flying and shooting lasers out of my eyes. I guess kind of like Superman, but cooler.
What is your greatest talent that you don’t utilize in your daily work life? – Reading minds.
Which talent would you most like to have? – I would love to be able to speak 10 different languages.
What is your favorite movie? – That’s a tough one. Scarface, Christmas Vacation, Team America World Police, Caddy Shack, Office Space, Super Troopers
What is your favorite TV show? – Seinfeld, Curb Your Enthusiasm, South Park, and a whole bunch on HBO.
What is your favorite local restaurant? – Jams. Mark has done a wonderful job there and no matter what you get it’s really good.
